Recipe for simple mapo tofu

1. 1 and a half yuan of northern tofu, our whole family They all prefer tofu, so I make one and a half pieces of tofu at a time.If I can’t eat that much, I can just use one piece of tofu at a time.

2. Cut the tofu into small cubes about 1CM square.

3.Appropriate amount of fresh pork.

4.Change the knife and cut into small cubes.

5. Green onions are white and 2CM long, cut into minced pieces.

6.Take the green bamboo shoots 2CM long, cut into small dices and set aside.

7. Half a pack of Mapo tofu seasoning, pour it into a bowl, add appropriate amount of water and mix well.

8. Prepare dried chili shreds and peppercorns for later use.

9. After the wok is hot, add the chopped minced pork and stir-fry until it changes color.

10. Add dried chili shreds and peppercorns and stir-fry until fragrant.

11. Pour in tofu and stir-fry, add appropriate amount of light soy sauce to adjust the color.

12. Pour in the evenly stirred Mapo Tofu seasoning, add a little salt, and turn to medium heat.Simmer lightly for a few minutes.

13.After a few minutes, the soup in the pot thickened.

14.Sprinkle in the chopped green onions and stir-fry a few times.

15. Place on a plate and sprinkle with chopped green bamboo shoots.

Tips
1.The tofu pieces should not be cut too big, as they will not be easy to taste, nor should they be too small, as they will break into pieces easily.
2.You don’t need to put a whole pack of Mapo tofu seasoning, half a pack is enough.Pair it with some dried chili peppers and peppercorns to make the flavor richer, especially the peppercorns.
3.During the stir-frying process, the stir-frying action should not be too large, otherwise the tofu will be easily cooked.
4.Add the seasoning and simmer the tofu over medium heat for a few minutes so that the tofu can take in the flavor.
5.Sprinkle some green bamboo shoots and tofu and eat together.The tofu is soft, tender, salty and spicy, and the green bamboo shoots are crisp and refreshing.This makes the dish very rich in texture.
6.Add less salt.Mapo tofu seasoning and light soy sauce contain a lot of salt, so you need to add less salt.If you are making a piece of tofu, you can leave it out.
