Ingredients
Korean kimchi ( 200g ) | Pork ( 100g ) |
Small melon ( 100g ) | Enoki mushroom ( 100g ) |
Tofu ( 100g ) | Dace ( 50g ) |
Spicy Sauce ( 20g ) | Korean hot sauce ( 10g ) |
Ginger ( 10g ) | Green onions ( 50g ) |
Garlic ( 10 grams ) | Sesame oil ( 5 grams ) |
Cooking wine ( 10g ) | Dark soy sauce ( 5 grams ) |
How to make kimchi pot

1. Prepare all materials

2. Marinate the minced pork with cooking wine, sesame oil and dark soy sauce; tofu and small melon (I used half of it Small melon) slices; mix the hot sauce (2 spoons of spicy sauce + 1 spoon of Korean hot sauce) because Korean hot sauce is more sour but not spicy.If you don’t like it too spicy, just use Korean hot sauce.; Squeeze out the juice from the kimchi (retain the juice); cut the ginger, green onions (separate the white and green green onions) and garlic.

3. First stir-fry the meat in warm oil to dry up the minced meat, then add the ginger, garlic and green onion and continue to stir-fry.fragrant.

4.Add hot sauce and stir-fry the red oil

5.Add the squeezed kimchi and stir-fry for a while to allow the kimchi to absorb the oil
6.Change the pot, add warm water, and pour in the kimchi juice.Add tofu and fish in turn (if you can’t buy clams, you have to use fish from canned dace instead) and cook for 5 minutes;
Add cucumber and enoki mushrooms and cook for another 5 minutes.
7. Finally add green onions and that’s it.
Tips
I originally wanted to use clams to enhance the flavor, but I didn't get them.So I used fish from canned dace instead, just a little bit is enough.It's actually quite delicious...The kimchi, hot sauce, and dace are all salty enough.Don't add any more salt.Korean hot sauce is quite sour, so add it in moderation.
