Glutinous rice flour ( 25g ) | White sugar ( 25g ) |
Condensed milk ( 15g ) | Milk ( 115g ) |
Corn oil ( 15g ) |
How to make snow-skin mooncakes

1. Mix glutinous rice flour, sticky rice flour, orange powder and white sugar

2.Add milk and stir evenly with a hand whisk

3.Add condensed milk and corn oil p>

4.Stir evenly and pour into the steaming bowl

5.After the water in the steamer boils, put in the steaming bowl and turn on high heat for 25 minutes
6. Fry some glutinous rice flour to use as hand flour.This recipe uses very little hand flour.
7.Let the steamed flour cool

8.In order to cool down faster, stir the flour

9.Wear disposable gloves and knead the dough into a smooth dough

10. Divide the dough into portions of 25 grams each.If you need a different color, separate the dough and add various fruit and vegetable powders.

11.Make the white dough into a round shape and flatten it into the white kidney bean filling.Divide the bean filling in advance., also 25 grams each

14. Place the colored flower pieces face up into the mooncake mold, then add the white dough.Also put some hand powder on the mooncake mold in advance and roll it evenly to prevent sticking.

16.Invert the mold, press it down hard, and demould.

17.My recipe is for nine snowskin mooncakes, but because I used a lot I made colored dough, so I made seven.The final colored dough was mixed to make a large snowskin mooncake.If I only made white ones, it would be exactly nine.

Tips
When steaming noodles, be careful not to let too much water fall into the bowl, otherwise the noodles will be too wet and sticky and difficult to handle.
