How to make homemade mooncakes

1. Add 1.5 pounds of flour to cold water and mix into a dough, which should be the same softness and hardness as pancakes.This is water dough, cover it with a damp cloth and let it rest for an hour.

2.Add appropriate amount of cooking oil to 1 catties of flour and knead until the dough is formed.This is oil dough.Same as above.

3. Put an appropriate amount of cooking oil in the wok and cold pan, add flour, the oil and flour are about 1.5:1 , start frying the pastry.You must stir fry constantly to avoid burning the pan.Fry for about half an hour until it becomes like sesame paste.Let cool and set aside.

Tips
To fry the pastry, fry the flour in cold oil in a cold pan and then let it cool.Must be stir-fried constantly.The crispiness of mooncakes mainly depends on the pastry.
