
Ingredients
Glutinous rice flour ( 125g ) | Rice flour ( 125g ) |
Flour ( 50g ) | Condensed milk ( 40g ) |
Powdered sugar ( 40g ) | Milk powder ( 25g ) |
Purple sweet potato puree ( 440g ) | Warm water ( 300ml ) |
Cooking oil ( 20g ) |

1.Glutinous rice flour, Mix rice flour and flour together.

2. Add condensed milk, milk powder and sugar powder to warm boiling water and stir to melt.

3. Mix the above ingredients into a thin paste, add cooking oil and mix well.

4. Steam in a pot over water for 20 minutes (take out and stir once halfway through).

5. Stir-fry the glutinous rice flour in a pot until it turns slightly golden.

6. Divide the steamed dough into about 22 parts, and knead each into It is a small dough ball of 30 grams.

7. Prepare 20 grams of purple potato filling balls each.

8. Spread cooked flour on both hands, spread the flour balls thinly, and put in the purple sweet potato balls.

9.Pack together.

10.Coat the whole thing with cooked flour.

12.Put the ball in with the smooth side facing in and the closing part facing out.

13. Press the pressure plate with medium force and avoid using too much force.

Tips
1.This amount can make 22 mooncakes in a 50g mold.2.For the filling method, please refer to my recipe "Milk Coconut Purple Sweet Potato Filling".3.When pressing the mold to finalize the shape, press the platen with medium force.Do not use too much force, otherwise the pattern template will stick to the pattern template and it will be difficult to release the mold.
