Ingredients
Low-gluten flour ( 100g ) | Corn starch ( 100g span> ) |
Powdered sugar ( 50g ) | Butter ( 90g ) |
Cooked egg yolks ( 3 ) | Salt ( 1g ) |
How to make margarita cookies

1.Prepare all the ingredients and soften the butter in advance!

2. Add the powdered sugar and salt to the butter and mix well! (You can use white sugar, but the powdered sugar has a more delicate texture.Be sure to wait until the butter softens, otherwise the butter will splash out when using an electric whisk!)
3.Use an electric whisk to beat the butter until it is fluffy and white! 
4.Crush the cooked egg yolk with a spoon! (Generally, two yolks from ordinary eggs are enough.I use free-range eggs, three for small ones)
5.Sift the cooked egg yolks into the butter and stir evenly!

6. Mix the low-gluten flour and cornstarch together and sift them together into the butter.! Mix well with a spatula, knead into a smooth dough, wrap in plastic wrap and refrigerate for an hour!

7. Take out the dough and divide it into small portions of about 15g, and then roll them into balls!

8. Line a baking sheet with oiled paper and flatten the rounded dough with your thumb., allowing natural cracks to appear around it!

9. Preheat the oven to 180 degrees! Bake the upper and lower layers for about 15 minutes!

10. Comes out of the oven, delicious! I couldn’t resist eating one!
Tips
You can use white sugar or powdered sugar.The powdered sugar should be finer!
