How to make cocoa cookies

1. Prepare the materials and beat the eggs into egg liquid in advance.(The usual way of stirring eggs is to "beat them up".)

2.Unsalted butter room temperature Soften, add powdered sugar and mix thoroughly.(PS: The weather is cold and butter is not easy to soften, so I melted it in water and refrigerated it.However, when I took out the butter that had been refrigerated for a few minutes from the refrigerator and stirred it, I found that part of the butter was gone.It can turn back into a solid state, but into a white milk liquid state. The finished product will not be affected. Please pay attention. If there are new discoveries in the future, I will solve it urgently)

3.Add the beaten egg liquid, take 30ml, and continue to stir thoroughly.

4.Sift in low-gluten flour and cocoa powder.(PS: In order to sift the flour and cocoa powder evenly into the basin, I have mixed them together when softening the unsalted butter at room temperature! So the sifting will be more even!)

5. Knead evenly with your hands and knead into dough, or put it directly into the mold.(PS: Because different brands of flour have different "water absorption", the "140g unsalted butter" I used just fits the "200g Xinliang brand low-gluten flour + 75g powdered sugar + 30ml egg liquid + 15g cocoa" in my recipe "Powder".If you encounter a situation where you can't knead it into a ball, just add a little more butter! If you're not sure, just start adding low-gluten flour, little by little, and you can knead it until it forms a ball! I feel It will be more convenient to knead the dough and stuff it into the mold! Hehe~)

6.Put in Refrigerate for about an hour.Take out the frozen semi-finished product from the refrigerator and cut into 1cm thick pieces.(PS: Just make the biscuit dough slightly hard! If it is too hard, it will be difficult to cut.If it is too soft, it will distort the cutting surface! If you want the cut semi-finished products to look good, you can’t ignore this point. If the dough is really If it’s too hard to cut, just soften it at room temperature for a few minutes.Don’t soften it for too long.)

7. (PS: The oven is set to 170 degrees in advance, and the upper and lower tubes are preheated for 10 minutes.) 170 degrees, upper and lower tubes, for 20 minutes.Pay attention and observe that the edges are browned. If you like it crispy and firm, you can bake it for a few more minutes. You can control the time yourself.Because the "temperature" of each oven is different, the baking time may not be the same, so please pay attention! Notice!
