High-gluten flour ( 210g ) | Water ( 130g ) |
Yeast ( 3g ) | Salt ( 2g ) |
Olive oil ( 10g ) | Filling: brown sugar ( 50g ) |

How to make brown sugar hollow cake

1. Mix the dough ingredients and knead until smooth and a thick film can be drawn out.

2. Room temperature fermentation will make it 2.5 times larger.Divide into 50g portions.

3. Mix the filling ingredients and grind into powder with a food processor.Take a piece of dough, roll it into a cake shape with a thick middle and thin edges, scoop out a large spoonful of filling and wrap it up.The closing must be tight, otherwise the filling will be exposed.

4.Use a rolling pin to roll into a 1 cm thick round cake and place it on a baking sheet.

5. After everything is wrapped, preheat the oven to 200 degrees.Brush the surface of the round cake with egg wash and sprinkle with black sesame seeds or other decorations (I don’t have sesame seeds, so I sprinkled with wheat germ)

6.Middle rack of oven.Bake for about 13 minutes.If you like the crust to be crispy, you can extend the baking time appropriately; if you like it to be soft, shorten the baking time.Never open the oven halfway through.
Tips
1.After wrapping the stuffing, pinch and close the mouth tightly to prevent the stuffing from being exposed after expansion.
2.Do not open the oven during baking
3.Sufficient time should be given to preheat the oven
